Alessandra De Cesare is an Associate Professor in Food Inspection and Safety of Foods of Animal Origin at the Department of Veterinary Medical Sciences of the University of Bologna. She is currently teaching in the Master Degrees of Veterinary Medicine and Food Animal Metabolism and Management in the Circular Economy (FAMCE). She is and has been, involved in European projects addressing: (1) metagenomic sequencing of food-animal systems to investigate the microbiomes associated to human, animal and food systems (H2020 projects CIRCLES 818290, VEO 874735 and COMPARE 643476); (2) implementation of innovative teaching strategies for the next generation of professionals in the agri-food system (H2020 project NextFood 771738; Una Europa Projects Virtual Slaughterhouse VSS and NEXTVET); (3) categorization of ingredient combinations and preparation procedures improving safety of artisanal and RTE foods (PRIMA project ArtisaneFood and FP7 project STARTEC 289262); (4) fit for purpose sampling schemes for specific food/risk combinations (FP7 project BASELINE 222738). She is the author of more than 150 peer-reviewed papers and book chapters on topics related to food safety. She is a member of the EFSA BIOHAZ panel since October 2018, collaborates in the Joint FAO/WHO Expert Meetings on Microbiological Risk Assessment (JEMRA), and supports the EC in the evaluation of proposals for Horizon Europe. She is vice-editor in Chief of the Italian Journal of Food Safety.

Raffaella Branciari is an Associate Professor in Food Inspection and Safety of Foods of Animal Origin at the Department of Veterinary Medicine of the University of Perugia. She teaches in the Veterinary Medicine degree program and in postgraduate training activities related to food hygiene, inspection, and safety of foods of animal origin. Her research activity focuses on the safety and quality of foods of animal origin, with particular attention to microbiological and chemical hazards, meat and fish products, game meat, dairy products, foodborne pathogens, natural antimicrobial and antioxidant compounds, and sustainable innovation in food production chains. She has been involved in several national and international research projects, often with responsibilities as scientific coordinator or head of research unit, particularly in the fields of fish products, poultry and swine chains, dairy products, game meat, and the use of olive industry by-products to improve food safety and quality. She has held several academic and institutional roles at the University of Perugia, including Quality Assurance Officer of the Department of Veterinary Medicine, member of the University Quality Assurance Board, and member and Vice-Coordinator of the PhD program in “Ethics of Communication, Scientific Research and Technological Innovation”. She is also an ANVUR expert for the initial and periodic accreditation of universities and degree programs. She is a member of the Scientific Committee of the Italian Association of Veterinary Food Hygienists and has served the scientific community through editorial and peer-review activities in the field of food safety.
