The current Constitutional Law allows the Italian Regions to deliberate autonomously on health matters. Therefore, most of them, complying with the scientific evidences, the European Regulation n. 852/2004 and the National Law d.lgs 155/97, have abolished the sanitary certificate for the staff in food business and have introduced the professional training course in order to improve the food safety.
